Organic Coconut Crunch Macaroons

2 cups organic raw almonds
1 cup organic coconut flakes or coconut chips (found at Green Girl Organics)
1 teaspoon organic almond extract
6 – 10 organic pitted dates

1) Soak almonds 8 hours in bottled spring water, soak dates 2 hours in bottled spring water as well.
2) In a food processor, blend 1/2 cup of the water from dates, with almond extract,
dates, and shredded coconut (keeping dough thick, so slowly add the water from the dates because you might not need it all.)
3) Drop ‘dough’ on wax paper, or parchment sheets on dehydrator trays. Dehydrate 12-24 hours or until dough is firm or until reaches desired chewiness.

Makes about 30-40 macaroons depending on size.
