Try this delicious pizza as a treat or as a meal after a hard workout.



1 gluten free frozen pizza crust (try Glutino brand gluten free pizza crusts, 4 crusts to a bag, at Baxtrom’s Grocer in the organic freezer section)

1 teaspoon or so, Organic Cold Pressed Olive Oil

1 handful Baby Organic Spinach

1 small Organic Eggplant

1 teaspoon Fresh Oregano

1 teaspoon Fresh Basil

1 Organic Tomato

1/4 cup Extra Old Organic Cheddar Cheese (try PC brand at Baxtrom’s Grocer)

dash of Organic Onion Powder, Organic Garlic Powder, Sea Salt and Fresh Ground Pepper

Place pizza crust on cookie sheet. Cover top of pizza crust with olive oil and place in oven on bake at 325 degrees until golden brown and crispy.

Take out of oven and sprinkle fresh chopped herbs and spices over pizza crust. Next, place spinach over pizza crust with thinly cut eggplant rounds (eggplant can be dipped or lightly dusted with olive oil as well to make them brown when cooking in oven) and thinly cut tomato medallions on top. Cover everything lightly with grated cheese and extra fresh herbs if desired.

Put back into the oven and bake for a few minutes longer to cook eggplant and melt cheese.
